Jay's Blueberry Buckwheat pancakes

  • Purchase 1 pound Bob's Red Mill Old Fashioned STONE GROUND BUCKWHEAT PANCAKE AND WAFFLE MIX and 1 pound Bob's Red Mill Buttermilk Pancake mix from your local grocer. (Safeway or Ray's)
  • Mix 2 cups buttermilk pancake mix and 1 cup buckwheat mix in a pitcher with 2 eggs and a teaspoon of canola oil and 2+ cups water. Throw in a handful of Haven Farm blueberries. When I was a young boy I remember my friends mother would say, "We just throw it together stir it a little with a spoon and let it set a few minutes." In other words she did not mix it all that thoroughly. She used to take it on fishing trips already mixed in the pitcher and pour it on the griddle. I take a spoon and give the middle a quick spread out with a circulair motion in the center just after pouring on the griddle.
  • Flip pancake when the bubbles start to break. I lift mine a little and peek under. Practice makes perfect, however I still need a little luck to get the griddle the right heat, the pancakes the right consistency, size and flip them just right. The leftover batter in the pitcher can be placed in the refrigerator.
  • The pancakes are great just like this but if  I want a little sweeter pancake I pour some Smucker's Blueberry pancake syrup on them.
